Recipe for Apple Crumble with Rhubarb

Try this in Winter time to really get the best tasting rhubarb. The sweetness of the apples really contrasts well with the tartness of the rhubarb. Serve with thick warm home-made custard, or use a good quality tinned variety.

Ingredient List:
1 large apple
4 stalks of rhubarb
3 tbsp of caster sugar
125g of caster sugar
100g of plain flour
60g of rolled oats
60g of butter
30g of chopped mixed nuts

Method:
1) Preheat the oven to 200C/gas mark 6.

2) Peel, core and chop the apple. Remove any stalky bits from the rhubarb and top and tail them. Chop into pieces. Put into the bottom of a large oven dish and sprinkle with the 3 tbsp of caster sugar.

3) Mix the flour, oats, 125g caster sugar and nuts in a large bowl. Add in the butter and rub with your fingertips until it resembles breadcrumbs.

4) Sprinkle the crumble mixture over the fruit.

5) Put into the oven and cook for 45 minutes. The fruit will be bubbling and delicious.
